ALASKAN KING CRAB MEAT AND MANGO SALAD

Ingredients:

1/4 cup olive oil
1/2 cup Red Wine Vinaigrette
1/2 cup of paisley roughly chopped
1 head of Butter lettuce
1/2 cup of torn Watercress leaves
1 Avocado, diced
1 Mango, diced
1 tsp orange zest
500g Alaskan King Crab Meat
Salt and ground black pepper

Directions:

Cut some romaine or butter or a mix of two lettuces into chunks, toss together. Mix up some olive oil with red wine vinaigrette, and add some salt.

Pour 1/2 of the dressing on the lettuce mix, toss them briefly, sprinkle on some black pepper and salt, and mix all of them again until well combined. Pour 1/2 of the remaining dressing on the diced mango and avocado, mix them with some parsley and watercress briefly, add some black pepper and salt, and toss them again till well combined. Mix the Alaska king crab pieces with the remaining dressing.

Divide the lettuce mix evenly between four plates, follow with mango and avocado mix and pile up the Alaska king crab meat pieces on top. Sprinkle with Orange Zest and serve.
