AVOCADO AND SALMON CEVICHE WITH HUON SALMON CAVIAR

Ingredients:

Juice of 1 Lemon
2 tbsp soy sauce
2 tbsp Sesame Oil
Olive Oil
1 Red chilli thinly sliced
Caster sugar
1 tsp black sesame seeds
1 avocado diced in to small cubes
2 x200g Salmon Portions (Skin Off)
80g Huon Salmon Caviar
1 lime thinly sliced

Directions:

For the dressing, whisk first 5 ingredients together, season with salt, pepper and sugar to taste.

Dice Salmon portions into small cubes. Peel and dice avocado into small cubes. Gently mix together adding the red chill and dressing. Leave to marinate for 5-10 minutes. Divide mixture into 6 portions. Place egg ring in the middle of each plate, place the mixture inside and lift the egg ring gently maintaining mixtures formed shape. Gently spoon some Salmon Caviar on top of the mixture and gently sprinkle black sesame seeds over the stacks. Decorate with a slice of lime. Serve immediately.
