GRILLED GREENLAND HALIBUT WITH MANGO AND CHILLI SALSA

Ingredients:

2 cups tomatoes, seeded and diced
1.5 cups diced mango
1/2 cup diced onion
1/2 small red chillis chopped
1/2 cup chopped fresh coriander
2 tbsp fresh lime juice
1 tbsp cider vinegar
1 tsp sugar
1 tsp salt, divided
1 tsp black pepper
2 cloves garlic, minced
1 tbsp olive oil
1kg of Greenland Halibut filleted

Directions:

Prepare grill or BBQ.

Combine first 8 ingredients. Stir in 1/2 teaspoon salt, 1/2 teaspoon pepper, and garlic to make salsa and let stand.

Cut Halibut into 4 even portion. Rub halibut with oil; sprinkle with 1/2 teaspoon salt and 1/2 teaspoon pepper. Place fish on grill rack or BBQ; grill 3 minutes on each side or until fish flakes easily when tested with a fork. Place on a plate and pile mango salsa on top. Serve immediately.
